Description
This recipe is dedicated to Nat and Rachel, who inspire me to bake yummy things for their enjoyment.
This is a summer recipe from the wonderful seasonal cookbook Simply in Season.
Ingredients
- 1 c flour
- 3⁄4 c whole weat flour
- 1⁄3 c baking cocoa
- 1⁄2 t baking soda
- 1⁄2 t salt
- 3 c zuccini (shredded)
- 1 egg
- 3⁄4 c sugar
- 3⁄4 c brown sugar
- 1⁄2 c plain yogurt
- 1⁄2 c oil
- 1 t vanilla
- 1 c semi sweet or mint chocolate chips
- 1⁄2 c chopped nuts (optional)
Instructions
Combine the flour, whole wheat flour, baking cocoa, baking soda and salt in a large bowl.
Stir in the shredded zucchini.
Combine egg, sugar, brown sugar, plain yogurt, oil and vanilla in a seperate bowl and beat with a fork. Stir into zucchini mixture. Spread evenly into greased 9x13 inch pan.
Sprinkle chocolate chips and nuts on top of batter. Bake in preheated oven at 350F until toothpick inserted in center comes out clean, 35-40 minutes.
